Energy balls of dates, chia seeds and pumpkin seeds

Ingredients
- 1 tablespoon of chia seeds
- 25 grams ERU Balans
- 8 stoneless Medjool dates
- 10 grams pumpkin seeds
- 30 grams oats
- 75 grams grated coconut

Preparation| 5 min
- Mix the chia seeds with ERU Balans and leave to soak.
- Put the dates in a mixer and blend till you have a smooth mixture.
- Add the dates to the cheese mixture.
Method| 10 min
- Toast the pumpkin seeds in a dry frying pan, keeping them moving, until they begin to “jump” in the pan.
- Put on a plate to cool.
- Then mix together the pumpkin seeds, cheese mixture and oats.
- Make little balls from the mixture.
- Roll the balls through the grated coconut.
