Pan toastie with cheddar, sambal, tuna, capers, gherkin and tomato

Ingredients
- 2 tins of tuna in oil
- 1 tomato
- 2 tablespoons mayonnaise
- 2 tablespoons capers
- 3 tablespoons cocktail onions
- Pepper
- 8 slices of white bread
- 8 slices ERU Cheddar Slices Red Pepper
- 4 cocktail gherkins
- Olive oil
- 40 grams rocket

Preparation| 5 min
- Drain the tuna and put in a bowl. Loosen with a fork.
- Slice the tomato.
Method| 15 min
- Mix the mayonnaise with the tuna.
- Add the capers and 2 tablespoons of cocktail onions. Keep one tablespoon of onions aside.
- Season the tuna salad with pepper.
- Generously cover 4 slices of bread with tuna salad and top with 2 slices of ERU Slices Cheddar Red Pepper.
- Top with the remaining 4 slices of bread.
- Heat a little olive oil, cook the toastie in a frying pan with lid.
- Turn the toastie over so that the other side becomes golden and crispy too.
- Halve the toastie diagonally.
- Garnish each half with a few rocket leaves.
- Stack the two halves, top with a slice of tomato, gherkin and cocktail onion and secure with a satay stick.
- Serve with ketchup if you like.
