Toastie with cheddar, chicken breast, spinach, sweet potato and lime mayonnaise

Sweet potato on your toastie? Why not! This energy booster on brown bread with chicken breast, spinach and tasty cheddar will keep you satisfied. Delicious with a fresh lime mayonnaise.

Ingredients

  • 2 sweet potatoes
  • Olive oil
  • Salt and pepper (to taste)
  • 1 lime
  • 4 tablespoons mayonnaise
  • 8 slices of brown bread
  • 12 slices of chicken breast
  • 200 grams spinach
  • 8 slices ERU Slices Cheddar Red Pepper

  • Toastie maker

Preparation| 5 min

  • Peel and thinly slice the sweet potatoes.
  • Drizzle with olive oil and season with salt and pepper.
  • Halve the lime and grate the zest of half of it.

Method| 20 min

  • Heat a frying pan and fry the sweet potatoes on both sides until tender and light brown.
  • Mix the lime zest into the mayonnaise.
  • Spread lime mayonnaise on one side of 8 slices of bread.
  • Lay 4 slices of bread with the mayonnaise side up.
  • Top the bread with the sweet potato slices and one layer of spinach.
  • Top these with 3 slices of chicken breast and another layer of spinach.
  • End with 2 slices of ERU Slices Cheddar Red Pepper.
  • Top with the remaining 4 slices of bread, mayonnaise side down.
  • Heat a toastie maker.
  • Grill the toasties for around circa 2-3 minutes until crispy.
  • Halve the toasties diagonally.
